Interaction of Nanoparticles with Macromolecules: Biomedical and Food Science Applications

In this chapter we focus on recent developments in nanotechnology, especially emphasizing the interaction between nanoparticles (NPs) and macromolecules. Nanoparticles and macromolecules depend on various parameters, including the sizes, shapes, charges, and chemical functionalities of these moieties. Macromolecules are nontoxic and extremely biocompatible but show strong affinity to bioactive compounds through various molecular interaction, such as π-π interactions, hydrophobic and hydrogen bonds. Nanoparticles and macromolecule carriers are capable of improving the efficacy of chemo therapeutics by their enhanced passive accumulation in tumor tissue as compared with low molecular weight drugs. Further we discussed the role of nanoparticles in foods science.
